Why is my ghee liquidy or grainy?

Ghee is primarily used as a cooking fat, or on top of warm foods and drinks. So no matter what the texture is, it melts into clear golden liquid in few seconds when heated. We can't promise a particular texture once the jar arrives. To do so, we would have to over-process the product and add fillers/stabilizers etc. and we can't, as we want to keep the product absolutely clean and all of our ghee is made traditionally, just as it has been for thousands of years in India.

How is ghee made?

​Ghee is prepared by melting and simmering butter until all the water evaporates and the milk solids settle at the bottom. The remaining butter oil is very stable, giving it a high smoke point which makes it an excellent choice to use for frying and sautéing and it can be stored without refrigeration for up to a year.

Is ghee dairy?

Many people can’t tolerate dairy, but they are able to consume ghee. Casein and lactose are removed during the making of ghee. Unless a person is very sensitive, consuming ghee is safe for those with dairy issues, unlike butter.

Why Grassfed?

Grass-fed cows produce milk that is high in naturally occurring Vitamins A, D & K, as well as conjugated linoleic acid (CLA), an antioxidant and essential fatty acid. In addition, grassfed ghee contains a balanced ratio of omega-6 to omega-3 fats. (This ratio is around 3:1 for grass-fed animals compared to over 20:1 for grain-fed animals!)

Conversely, grain-fed cows produce unhealthy fats you wouldn’t want in your body. Most cows are corn or soy fed. It’s cheap and filling, but indigestible for cows.

    Well, I've finally joined the rest of the world in the 21st century by eliminating all the non-stick coated pans from my kitchen. I've gone back to my old favorites, the All Clad Stainless Steel pans that don't add toxins to my food (my favorite go-to pan is this one All Clad Stainless Steel 4-Quart Saute Pan with Lid). The unfortunate reality is, though, that in my non-expert hands, most foods I cook do stick to my pans. The solution: Ghee.

    Because Ghee has a higher flash point than butter, it doesn't break down at all during cooking. You know what I'm talking about. You use butter to sauté but find that you have to keep adding more and more as you go because it mysteriously disappears or browns onto the pan. That doesn't happen with Ghee.

    I'm not one to participate in the many common dietary trends. As someone with a bit of formal training on both nutrition and the workings of the human body, I believe that balance and moderation are the keys to excellent nutrition. My mantra is: everything in moderation. We do need some cholesterol in our diets, just not as much as we'd like. We also need carbohydrates. The great majority of us, who aren't sensitive to lactose or glutens actually should be eating these things.

    That said, I am not a fan of GMOs these days. My viewpoint is not dietary in nature. I certainly don't want to get into my environmental concerns or discuss the virtues of anti-trust regulations. I'm just going to say that I appreciate the fact that this product is made from organic milk alone. The milk used in this product is harvested in the spring and fall only, when the cattle are permitted to graze exclusively on non-GMO green grass (the growth phase of the grass affects the nutrition it provides).

    The fact that the cattle are restricted to a diet of green grass alone affects the flavor of their milk, which in turn affects the flavor of the Ghee.

    I am an F1 Hybrid, myself. Yes, my father is 100% Persian while my mother is a typical American of mixed European heritage. As such, I learned to cook a few traditional Persian delights, many of which incorporate ghee. It is for this reason that I have experimented with many different varieties of Ghee. This brand is far superior in flavor and texture. And while my initial interest in ghee was in ethnic cooking, I've found that I use it in a broad array of dishes these days.

    Further, it pleases me that this company seems committed to ethical business practices and conservation of the environment. These folks provide a truly superior product with a social conscience. If you've never tried cooking with Ghee, you'll be delightfully surprised at how much buttery flavor you can infuse with such a minimal amount of cholesterol added (because the ghee doesn't brown or dry up during cooking, and you can use less). The manufacturer doesn't add salt to this ghee. Additionally, the product is free of trans fats, colorants, and preservatives.

This is a favorite staple in my kitchen, and I was glad to find that it is GMO free, though that fact was not among my reasons for purchase initially.

    And the TONGUE is deeeelighted to the hilt too.

    I am totally lactose intolerant. Can't even stand lactase added foodstuffs but I love the taste of cheese, butter and various creams in luscious coffees.

    I've been one sad puppy having to give all of that up in the last five years, as matters escalated to full fledged pain that doubles me over if I indulge. And you wouldn't want to be near the output when I cheat and eat any of the above.

    I was thrilled to learn that ghee could at least put one of my 3 dairy loves back in my life.

    Actually long ago I gave ghee a go but ignorantly didn't have a clue of what it takes to make ghee not taste like cotton!

    S A L T that's it! No salt no flavor whatsoever. With it you have a mouthful of yellow gorgeousness that does not fail.

    I find that this product's non gmo organic grass fed attributes are just the ticket to help us care for our bodies. The fact that cows (and of course chickens and other livestock) are fed soy, meats and even left over bakery sugary items thoroughly disgusts me. I praise and support natural grazing farming best I can.

    Back to the yummy factor.

    I melted some and drenched popcorn.

    The oil is bright clear yellow when it begins to melt it and when I'm done frying with it its still bright clean and golden. I strain out the fry crumbs and its ready to fry in again.

    Of course on a kaiser its fattening and good. Just don't forget the salt dusting. Sorry-- without the salt, any ghee is for the trash, really you can't taste it.

    Lastly noooo stomach upset whatsoever and that's despite the fact that ghee's competitor Butter Oil remarks that ghee is not Absolute ZERO lactose like butter oil is. I may find that indeed there is a limit to how much ghee I can handle if there are trace amounts of the bothersome components in it but so far I can have as much as I used to when I was younger and had no milk issues. I'd say ¼ pound a month is all I ever ingested (yes more is in the frying pan I'm only referring to the directly swallowed intake ie on bread on popcorn string beans etc) and now I am able to chomp that again.

    Wish some genius could do this for cream and cheese. Many of us would beat a path to the manufacturer's door!

    Off to sauté yellow squash in Pure Ghee w brown sugar to boot. Oh yess I can have a half of these also crazy good 7 grain English muffins, Organic Sprouted Grains English Muffin been so jealous watching family go nuts over them.

    I was not paid to write the review not even a ten cent off coupon was offered.

    RECOMMEND: HIGHLY

    And I'll save up for Butter Oil and see how that treats me too. This butter subject has me all curious now. A solution right under my nose and I missed out for too long Darn.
