This salad recipe is simple, summery and to die for!
I purchased four fat ripe tomatoes and a bag of basil at our local farmers market, and then we bought a 10oz(ish?) thing of mozzarella cheese at Kroger. Fresh mozzarella is soft in consistency, white and luxurious.
First, I chopped up the tomatoes and mozzarella into bite size cubes. Then, I chopped up the basil and added it to the bowl. To finish (and this is really easy!), just add extra virgin olive oil and aged balsamic vinegar in equal parts. Stir everything up in the oil and vinegar, and if it doesn’t seem coated enough, simply add more.
This is perfect as a summer side dish, a party salad idea, or simply to eat for lunch (or for breakfast, like I did this morning). Couldn’t resist!
