I just made these, and there are only two halves left. …And Frank and I are about to eat them!
You guys, these are so good and so easy to make. OMG YUM.
Okay so remember my homemade peppermint patties recipe? Well, while making that recipe, I had to create a substitute for store-bought chocolate chips, thus learning how to make my own chocolate.
What happened is that I created a most excellent dipping chocolate. Smooth, quick to harden, perfect texture as it thaws. MMMmmm. And instead of dipping in peppermint centers, I thought BANANAS. WITH PEANUT BUTTER.
So this is almost a non-recipe, but you’ll need the recipe for dipping chocolate, which is just my peppermint dark chocolate recipe, minus the peppermint oil.
Step 1:
Cut bananas in half and then in half again.
Step 2:
Spread peanut butter on one side.
(lots of it)
Step 3:
Freeze bananas until they are solid.
Time: an afternoon.
Step 4:
Dip frozen bananas in dipping chocolate, and place back in pan.
Step 5:
Decorate with coconut powder, chopped nuts, (MORE PEANUT BUTTER), or whatever you wish. :)
Eat immediately or freeze for later.
Next time I make these, I’m going to cut them into 1/2″ thick coins put a marble of peanut butter on them, freeze them, and THEN dip them in chocolate. Voilà! Chocolate peanut butter banana bites.
I told Frank about this brilliant idea, and he said, “So…it’s basically just a peanut butter cup with a little banana on it?” UM, YES!
