Yum! So usually I make this with okra, but I found Indian green beans at the farmer’s market this week, and I decided to mix it up a bit! I like to leave the green beans somewhat crunchy, so you get a lot of texture with this dish. It’s a great side dish and the spices are all healing, as usual. ;)
How to make it
In a food processor, purée the onions, garlic and ginger. Add the mixture to a large skillet, and fry in butter or ghee until mixture begins to brown. Mix in the spices and thoroughly coat. Add chopped tomatoes, then add the green beans, mix, cover, and steam 10 minutes or until the beans reach desired texture. I prefer mine with slight crunch still.
