Florida, you tricked me. I thought you would be warm year round, but instead you are bone-chillingly cold today. I’m a wimp, I know. It’s only 46˚F. But after skipping out on winter two years in a row—not to mention living in dry areas—my body forgot what humidity and low temperatures feel like! My goodness! Brrrrrr!!
I bundled up in sweat pants and a scarf just in the house. Because who wants to pay for a heating bill when it’s only 46˚F outside? I’m not that pathetic. I think.
There is condensation INSIDE my windows. Why, Florida? Why?!

Oh! But that’s not why you clicked on this. You clicked on this for a vanilla pudding recipe. Because when Florida is freezing cold, warm vanilla pudding is exactly the ticket! Let’s get started, shall we?
Ingredients
- 2 eggs (preferably pastured)
- 2 TBSP butter (preferably grass fed)
- 2 cups milk (preferably raw)
- 1/3 cup maple syrup (buy here)
- 2 TBSP vanilla extract
- 1/3 cup einkorn flour, sifted (buy here)
Place all ingredients in a sauce pan and stir slowly on medium-low heat until thickened. Voila! Vanilla pudding. Comfort food. :)
