Tandoori Masala is easily purchased these days online or in grocery stores. However, I’ve always preferred to make my own so I can tailor the flavor to be more bold and a little more nuanced. After all, that’s the beauty of masala. For years, you couldn’t buy tandoori masala in stores pre-made. Everyone’s mom made it a little different, which is half the fun. ;)
Anyway, here’s my tandoori masala recipe. I hope you enjoy!
Homemade Tandoori Masala Recipe
2 TBSP paprika
1-1/2 TBSP whole coriander
1-1/2 TBSP whole cumin
2 tsp whole black peppercorn
2 tsp ginger powder
1 tsp cardamom
1 tsp whole fenugreek
3/4 tsp garlic powder
1/4 tsp cinnamon
1/8 tsp clove
1/8 tsp nutmeg
2 cassia leaves
2 bay leaves
Grind everything together in a spice grinder.
