Want a holiday eggnog without the stabilizers, high fructose corn syrup, carrageenan, and other thickeners? This homemade eggnog recipe is super easy and delicious, and it can be made dairy-free and sugar-free, as well!
Eggnog is a classic tradition and is only made better by using real food ingredients, like whole cream, raw milk and pastured egg yolks. Warm spices like cinnamon make this drink especially comforting. Mmmmm.
Simply add a little rum, bourbon, or cognac to give this nog a little adult holiday kick. ;)
Or pour it into an ice-cream maker for a frozen treat. For a dairy-free version, simply use coconut milk in place of the milk and cream.
[box]”In the middle of the morning, Mother blew the dinner horn. Almanzo knew what that meant…Mother met him on the back porch with the milk pail, brimming full of cold egg-nog. The egg-nog was made of milk and cream, with plenty of eggs and sugar. Its foamy top was freckled with spices, and pieces of ice floated in it. The sides of the pail were misty with cold…he set down the pail, he dipped the dipper full, and he drank. The cold egg-nog slid smoothly down his throat, and it made him feel cool inside. …When he reached the hayfield, everyone stopped work. They…passed the dipper from hand to hand will all the egg-nog was gone. Almanzo drank his full share. Lazy John said, wiping the foam from his mustache, ‘Ah! That puts heart into a man!’ …Father always maintained that a man would do more work in his twelve hours, if he had a rest and all the egg-nog he could drink, morning and afternoon.…”

I get uneasy about using raw eggs….could this be cooked a bit on the stove before serving?
I grew up on a farm and we never separated our eggs for the eggnog, just used whole ones in the raw milk.
I will try this if I can ever find pure cream; in my area even the organic cream has thickeners in it – anyone else have that problem? They may be natural, but not just straight cream.
PS: Love the Farmer Boy quote!
I’m glad you included a dairy-free version; thank you!
This looks delicious – Thank you. You mentioned a non-dairy version using coconut milk and cream but what about the eggs. Any subsitute for that. Would the fake liquid eggs have the same effect?
I’ve never NOT used eggs, so I don’t know. I buy pastured organic soy-free eggs. Not sure if that helps or not.
And if there are no eggs, it isn’t eggnog, right? I just wonder what to do with all those egg whites!
Get four more egg whites and make and angel food cake! You could make a small custard with four yolks, too.
If you whip the whites to soft peaks, they dress the top of the nog. You can fold them in gently, too, and sprinkle with nutmeg.
found this. have not tried it. vegan “nog” http://www.rickiheller.com/2010/12/holiday-nog-egg-free-dairy-free-sugar-free-gluten-free-vegan/
How long will this keep please?
Ours lasts about 5 minutes before it’s in our bellies. ;) But it will last a few days in the fridge.
